Coconut Water Fruit Smoothies

Spring is coming. Time to get yourself in shape and nurture your body. Nothing does this as quickly as delicious coconut water fruit smoothies. Here’s a great recipe from Bobby Flay at the Food Network using bananas, mangoes and strawberries – yumm! Not only are smoothies good for you but it’s a great way to ingest a larger amount of greens or fruit than you would normally eat. It just goes down so easily. Here’s the recipe:

INGREDIENTS:

4 cans of CocosPure coconut water, plain or flavoured

2 bananas

2 mangoes

1 cup strawberries, fresh or frozen

1/2 cup Greek yogurt

2 tablespoons honey

 

DIRECTIONS:

Freeze the coconut water in ice cube trays. Take out and combine with the rest of the ingredients in a blender till smooth. Serve immediately. There may be no need to freeze the coconut water if you are using frozen strawberries or frozen mangoes. I like to top mine with a sprinkle of cinnamon.

Coconut Water Chocolate Smoothies

Here’s a great recipe using my favourite ingredient, chocolate. This recipe was modified from Lizzie Fuhr’s recipe in PopSugar Fitness. Thanks, Lizzie. We will return the favour some day. Here’s how to make these delicious coconut water chocolate smoothies.

1 can CocosPure coconut water

1 frozen banana

3 tablespoons raw hemp seeds

1 Tablespoon cocoa powder

 

Combine all ingredients in a blender and blend till smooth. You can top the smoothie with a piece of banana and a few seeds if you want. Makes one smoothie. Repeat the process for more smoothies. About 355 calories. This smoothie is high in B vitamins and Omega-3.

Here’s 3 Ways to Enjoy Coconut Water Drinks

Juice of 3 fresh oranges

1/2 mango pulp

1 cup coconut water

Pineapple Lime Coconut Juice

Juice from 1/2 small pineapple

Juice from 1/2 lime

1 1/2 cups coconut water

Put the pineapple through a juicer and mix together with the lime and coconut water. Serve immediately.

2 cups coconut water

1 teaspoon spirulina powder

1 cup frozen blueberries

1 teaspoon honey (optional)

Place all ingredients in a blender and process till smooth. Pour into glasses and serve.

Coconut Water Drinks: Coconut Sangria

What could be healthier than to add coconut water to the mix too? Here’s a coconut water drink recipe that comes to us from Davida at The Healthy Maven. I hope you try it. It has an added punch of vodka and wine.

Coconut Water Drinks: Coconut Sangria

Ingredients:
  • 1 cup pineapple, chopped
  • 1 cup mango, chopped
  • 1 orange, sliced
  • ½ cup vodka
  • 1 bottle of white wine
  • 1 cup coconut water
Instructions:
  1. Blend the fruit in a blender or food processor.
  2. Combine all ingredients in a large pitcher or bowl.
  3. Let sit for at least 2 hours (longer is better).
  4. Serve on ice.

Davida says to be careful about drinking too much of this drink that tastes like soda pop. Hangovers are not fun! However, there’s no better cure for hangovers than straight coconut water.

Coconut Water Recipe – Malaysian Curry Chicken

I found it amusing that in this modern day of frozen dinners and fast food, Ms. I-Hua considers herself lazy because she doesn’t grind her own spices or make her own sauces. You might find this coconut water recipe too spicy so tone down the spices as you like. You may not be able to find all these ingredients but do your best. Also, this recipe calls for creating you own coconut water by pressing the coconut meat that has been soaked in warm water. We know a better source of good coconut water from CocosPure, right?

Ingredients:

500-600 g of Chicken Breast (cut into rough chunks)
meat curry powder
3 dried red chillies (use with caution)
a pinch of Salt
4 tbsp vegetable oil
1 tbsp chopped garlic
2 tbsp Worcestershire Sauce
1 tbsp fish sauce
1 tbp Sambal Olek
1 tsp sugar
1 tsp ground white pepper

1 cup of toasted desiccated coconut (grated)
1 cup of coconut water (CocosPure is the best)
1 Kaffir lime leaf (shredded finely)
sliced red chillies (for garnishing)

Procedure:

Coat the chicken pieces in the curry powder and salt and set aside.

In a hot wok (or frying pan), heat up 4 tablespoons of vegetable oil. Once the oil is hot enough, brown the chicken in the wok on all sides. Take out and set aside.

Using the same oil, toss in the chopped garlic, dried red chillies and sambal olek. Once the aroma starts wafting up, gently pour some coconut water into the wok letting it simmer gently.

Add in the Worcestershire sauce, fish sauce, sugar and ground white pepper and let simmer.

Turn the heat back up on high and toss the browned chicken back into the simmer sauce and give it a good mix.

Add in half a cup of the toasted coconut making sure to mix all ingredients in the wok as to coat everything.

As the sauce thickens up, add in the remaining coconut water and let it simmer gently.

Once the sauce thickens up again, turn off the heat and transfer the curry to a serving dish.

Garnish with the remaining toasted coconut, shredded kaffir lime leaf and sliced red chillies.    Read more here.

Halloween Recipes with Coconut Water

Witches’ Brew

2 oz pineapple and cranberry juices mixed together

2 oz. CocosPure coconut water

2 oz. Malibu coconut rum

Pour over ice into frosted glasses. Drink immediately!

 

Bloody Mary

1 cup sliced strawberries

3 tablespoons agave nectar or honey

1 shot of white rum (optional)

Creepy Eyeball Martini

3 oz. lychee juice

2 oz Solerno blood orange liqueur

2 oz. CocosPure coconut water

Fill a cocktail shaker with ice, add in all the cocktail ingredients, shake well and divide between two martini glasses. Here’s how to make it:

    1. Put coarse ground coffee beans in a French press or glass bowl.
    2. Add cold Cocos / Cocos Pure coconut water (it is 100% pure – not from concentrate)
    3. Refrigerate for 12 hours
    4. Strain out the beans or push down the French press plunger.
    5. It will already be sweet from the coconut water, but adding a small drop of cream is heavenly.

Here’s how to make one:

      1. Use thickeners such as chia seeds and frozen fruit
      2. Use Cocos / Cocos-Pure as a low fat base. Skip the juices as they are high in calories.
      3. Add a good quality protein powder. One scoop is enough.
      4. Then add one tablespoon of high quality fats such as avocados, nut butters or flax seeds
      5. Go easy on the sweeteners. Use Stevia or other natural sweeteners. Flavor with green tea, ginger or cinnamon instead.
      6. I like to add some unsweetened cocoa powder as well. What could be better than a chocolate drink without the calories?
